A drizzle of oil is a sunray, sings one of the many poems inspired by the gentle yet intense smell of the pizza. It lies down with the delicacy of a puff, which is divine. The pizza is simplicity and refinement, it is the symbol of worlds that meet and this makes it famous in every place. It is the most diffused dish on the planet, as well as the most free and democratic because it allows innumerable interpretations of itself.

Its history is very ancient and it submerges its roots in the classic civilizations of the Mediterranean basin. The Egyptian Pharaohs ate a mixture of cereal flour seasoned with aromatic herbs, the philosophers of Athens handed on from father to son Babylonian recipes; the Roman troops ate some particular buns as a principal aliment during their campaign.

It is in the heart of the Mare Nostrum, though, that the pizza was born with its actual form and from where begins its conquest of the taste of the world. In Naples, in fact, between the 18th and 19th century, it gained a hold upon the public as a very tasty variation of the bread. During those centuries the success of the pizza developed remarkably both among the working class and the aristocratic class of the city.

Little by little, the ovens that prepared it in every square and the pedlars who sold it among the alleys become what today we call "pizza shops" in these places that the pizza becomes something more: the consumers can taste it taking a break, with tranquillity, in a convivial and spontaneous atmosphere, which is the real essence of the philosophy of the pizza.

The turning point, though, happens in 1889 when with a creative and graceful darting the baker Raffaele Esposito homage the Queen Margherita of Savoia with the most famous and joyful of the pizzas the one with the colours of the Italian flag tomato, cheese and basil.

Since then the pizza has travelled with the immigrants to every continent and in everyplace it has been able to feel at home because every nation can recognize something about itself.

Like a painter’s palette, it tonality inspires eccentric and playful fantasies, the feeling for holidays and everyday life, of discovery and confirmation.

Therefore, mainly for this reason, the original version is still very precious, the very plain and clever: the one that all over the Arc of the Gulf, between the sea and the Vesuvious from the city of Naples to the Sorrento Peninsula, is a away of being, a way of life, the style of an ancient land, where art and myth, beauty and culture blend together in an incomparable way.
